A simple method to cooking a whole chicken. Slow cooker required.

Ingredients
- 1 Large onion, peeled and cut into thick slices
- 2 Carrots, halved length-ways and chopped
- 1 Whole chicken, medium sized
- 2 tbsp Butter, softened
- 1 Bay leaf
Method
Place the onion and carrot in the base of the slow cooker to form a layer to sit the chicken on. Add 100ml boiling water. Stir some salt and pepper into the butter and press the butter onto and under the skin. Put the bay leaf in the cavity of the chicken and sit the bird on top of the onions and carrots.
Cook on low for 5 hrs, or until chicken is cooked through. Check that the chicken is cooked by wiggling the wing – it should feel very loose.
There will be some liquid/gravy in the base of the dish with the veg, tip everything through a sieve into a small saucepan and press the veg gently. Add a low heat, and thicken with cornflour if necessary. Serve with vegetables of your choice.
