Get the cooking time just right:
Our suggestion is 18 minutes per 450g. This should give you a perfectly cooked joint. BUT Ovens do unfortunately vary in temperature, so make sure you check your brisket is cooked through and tender, check with a fork or sharp knife it into the middle—either should go through the meat easily, with no resistance.
